Ingredients
  

2 lbs oxtail, cut into pieces

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 bell pepper, chopped (red or yellow)

2 tomatoes, diced

6 cups beef broth

2 teaspoons Worcestershire sauce

1 tablespoon soy sauce

2 bay leaves

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Oxtail:

    - Set the Instant Pot to Sauté mode. Add olive oil and let it heat for a minute.

      - Once hot, add the oxtail pieces. Brown them on all sides, about 5-7 minutes. Remove and set aside.

        Sauté Vegetables:

          - In the same pot, add chopped onion and garlic. Sauté until onions are translucent, about 3-4 minutes.

            - Add diced carrots, celery, and bell pepper. Cook for another 3-5 minutes until softened.

              Build the Soup:

                - Return the browned oxtail to the pot. Add diced tomatoes, beef broth, Worcestershire sauce, soy sauce, bay leaves, thyme, salt, and pepper. Stir well to combine.

                  Pressure Cook:

                    - Close the lid, set the valve to sealing, and choose Pressure Cook or Manual mode. Set the timer for 45 minutes.

                      - Once cooking time is complete, allow the pressure to release naturally for 15 minutes, then carefully release any remaining pressure.

                        Finishing Touches:

                          - Open the lid and remove the oxtail pieces carefully. Strip the meat off the bones and return the meat to the soup, discarding the bones.

                            - Taste the soup and adjust seasoning as desired.

                              Serve:

                                - Ladle the soup into bowls and garnish with fresh chopped parsley. Enjoy your hearty oxtail soup warm!
