3-4 lbs beef chuck roast

2 tablespoons olive oil

1 medium onion, chopped

4 cloves garlic, minced

4 cups beef broth

4 medium carrots, cut into chunks

3 large potatoes, diced

2 tablespoons tomato paste

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Sear the Meat: Set your Instant Pot to the Sauté function and add olive oil. Once hot, season the beef chuck roast with salt and pepper. Sear the meat on all sides until browned (about 4 minutes per side). Remove the roast and set aside.

    Sauté Aromatics: In the same pot, add chopped onion and minced garlic. Sauté until fragrant and the onion is translucent, about 3 minutes.

      Deglaze the Pot: Add a splash of beef broth to deglaze the pot, scraping up any browned bits from the bottom. Stir well.

        Add the Ingredients: Return the browned roast to the pot. Add the remaining beef broth, carrots, potatoes, tomato paste, dried rosemary, dried thyme, and bay leaf. Stir to combine.

          Pressure Cook: Close the lid of the Instant Pot, ensuring the vent is sealed. Set to Manual mode and cook on high pressure for 60 minutes.

            Natural Release: Once the cooking time is up, let the pressure release naturally for 15 minutes, then perform a quick release for any remaining pressure.

              Thicken Gravy (Optional): If desired, remove the roast and vegetables. Set the Instant Pot to Sauté mode again. Whisk cornstarch with a bit of water to create a slurry, then stir it into the simmering broth for thickening.

                Serve: Slice the pot roast and serve it with the veggies and a generous amount of the rich gravy drizzled on top. Garnish with chopped fresh parsley.
