1 pound boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 teaspoon Italian seasoning

3 cloves garlic, minced

1 cup cherry tomatoes, halved

3 cups chicken broth

12 ounces penne pasta

1 cup heavy cream

1 cup spinach leaves

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish

Set the Instant Pot to sauté mode. Add olive oil and allow it to heat up.

    Season the diced chicken with Italian seasoning, salt, and pepper. Add the chicken to the pot and sauté until browned, about 5 minutes.

      Stir in the minced garlic and cherry tomatoes, cooking for an additional 2 minutes until fragrant and the tomatoes start to soften.

        Add chicken broth to the pot, scraping up any browned bits from the bottom to avoid the burn notice.

          Add the penne pasta, ensuring it’s submerged under the liquid. Close the lid and set the valve to sealing. Cook on high pressure for 8 minutes.

            Once the cooking time is complete, perform a quick release. Carefully remove the lid and stir in the heavy cream, spinach, and Parmesan cheese.

              Allow the dish to simmer for a couple of minutes on the sauté mode until the spinach wilts and the pasta absorbs some of the sauce. Adjust seasoning with salt and pepper if needed.

                Serve the pasta in bowls, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese.
