1 lb baby red potatoes, scrubbed and halved

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

½ cup cooked crispy bacon, crumbled

¼ cup green onions, finely sliced

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

½ cup sour cream (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for 10-12 minutes until fork-tender. Drain and let cool slightly.

    Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix until well blended and creamy.

      Hollow the Potatoes: Once the potatoes are cool enough to handle, scoop out the center of each half, being careful not to break the skin. Reserve the scooped-out potato for another use (like mashed potatoes!).

        Fill the Potatoes: Carefully spoon the cheesy filling into each potato half until generously filled.

          Bake: Preheat the oven to 375°F (190°C). Arrange the filled potato halves on a baking sheet and bake for 15-20 minutes until golden and the cheese is bubbly.

            Serve: Remove from the oven, and let cool for a few minutes. Top each potato bite with a dollop of sour cream and a sprinkle of fresh parsley before serving.
