6 slices of Irish back bacon, chopped

1 large onion, diced

2 garlic cloves, minced

3 medium potatoes, peeled and diced

4 cups vegetable broth

2 cups green cabbage, chopped

1 cup carrots, diced

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Heat the olive oil in a large pot over medium heat. Add the chopped bacon and cook until crispy, about 5-6 minutes.

    Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent, about 3-4 minutes.

      Stir in the diced potatoes and carrots, cooking for an additional 5 minutes to soften slightly.

        Pour in the vegetable broth and bring to a simmer. Add the thyme, salt, and pepper.

          Once the soup is simmering, lower the heat to medium-low, cover, and let it cook for about 15 minutes, or until the potatoes are tender.
