Irish Bacon, Cabbage, and Potato Soup

6 slices of Irish bacon, diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable broth

2 cups green cabbage, shredded

1 cup carrots, diced

1 teaspoon dried thyme

1 teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced Irish bacon and cook until crispy and browned, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

    In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes until the onion is translucent and fragrant.

      Add the diced potatoes and carrots to the pot, cooking for an additional 5 minutes while stirring occasionally.

        Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce heat to a simmer and add the dried thyme and black pepper.

          After 10 minutes of simmering, add the shredded cabbage to the pot. Cook for another 15-20 minutes, or until the vegetables are tender.

            Return the crispy bacon to the soup, stirring to combine. Add salt to taste.

              Serve hot, garnished with a sprinkle of fresh parsley on top.
