8 Irish pork sausages (bangers)

4 large potatoes, peeled and diced

2 cups kale or green cabbage, finely chopped

1/2 cup milk

4 tablespoons unsalted butter

1/4 cup green onions, finely sliced

Salt and pepper to taste

Olive oil for frying

Start by boiling a large pot of salted water. Add the diced potatoes and cook for about 15-20 minutes or until fork-tender.

    While potatoes are boiling, heat a tablespoon of olive oil in a large skillet over medium heat. Add the bangers and cook until browned and cooked through, about 12-15 minutes, turning occasionally. Once cooked, keep them warm on a plate.

      In the same skillet, add the chopped kale or cabbage and sauté for about 3-4 minutes until softened. Remove from heat.

        Drain the potatoes and return them to the pot. Add the butter and milk, mash until smooth and creamy. Fold in the sautéed greens and green onions, seasoning with salt and pepper to taste.
