Irish Colcannon

Ingredients
  

1 ½ pounds of russet potatoes, peeled and quartered

1 cup of shredded green cabbage

1 cup of kale, chopped

4 green onions, sliced (greens and whites separated)

½ cup of whole milk

4 tablespoons of unsalted butter

Salt and black pepper to taste

1 teaspoon of garlic powder (optional)

Fresh parsley for garnish

Instructions
 

Begin by bringing a large pot of salted water to a boil. Add the peeled and quartered potatoes and cook for about 15-20 minutes, or until they are tender when pierced with a fork.

    While the potatoes are cooking, in a separate saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped kale and cabbage, sautéing for about 5 minutes until they soften.

      Once the potatoes are done, drain them and return them to the pot. Mash the potatoes with a potato masher until smooth, adding in the remaining butter and the whole milk for creaminess.

        Stir in the sautéed kale and cabbage mixture, as well as the sliced green onion whites. If using, sprinkle in the garlic powder for an extra kick. Season generously with salt and black pepper to taste.

          Mix everything together until well combined and heated through.

            Serve the colcannon in warm bowls, creating a small well in the center of each serving, and place a pat of butter on top to melt.
