Ingredients

4 large russet potatoes, peeled and cubed

1 cup heavy cream

2 tablespoons unsalted butter

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup green onions, finely sliced

1 teaspoon garlic powder

Salt and pepper to taste

1 pound pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Instructions

Preheat your oven to 375°F (190°C).

In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes. Drain and return to the pot.

Add the heavy cream, butter, garlic powder, salt, and pepper to the potatoes. Mash until smooth and creamy, and mix in the shredded cheddar cheese until melted and well incorporated.

Fold in the crumbled bacon and sliced green onions into the potato mixture, ensuring even distribution.

Roll out the pie crust on a floured surface and place it into a pie dish, pressing it against the edges. Trim any excess crust hanging over the edge.

Pour the potato filling into the prepared pie crust, smoothing the top with a spatula.

Cover the pie with a second layer of pie crust, sealing the edges by crimping them together. Cut a few slits in the top crust to allow steam to escape.

Brush the top crust with the beaten egg to give it a nice golden color when baked.

Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is heated through.

Allow the pie to cool for a few minutes before slicing and serving.
