4 large eggs

1 cup cherry tomatoes, halved

1 small onion, diced

1 bell pepper (red or yellow), diced

2 cloves garlic, minced

1 cup fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (or ½ teaspoon dried basil)

½ teaspoon red pepper flakes (optional for heat)

½ cup ricotta cheese

¼ cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.

      Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the halved cherry tomatoes, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Cook for 5-7 minutes until the tomatoes are blistered and juicy.

          Add the chopped spinach, stirring until wilted, about 1-2 minutes.

            Make four small wells in the vegetable mixture and gently crack one egg into each well.

              Dollop spoonfuls of ricotta cheese around the eggs and sprinkle the grated Parmesan on top.

                Carefully transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the eggs are set but the yolks are still slightly soft.

                  Remove from the oven and allow to cool slightly. Garnish with fresh basil leaves before serving.
