8 slices of rustic Italian bread

4 tablespoons basil pesto

8 ounces fresh mozzarella cheese, sliced

4 ounces provolone cheese, sliced

1 medium tomato, sliced

1/2 cup sun-dried tomatoes, chopped

1/4 cup fresh basil leaves

4 tablespoons olive oil

Salt and pepper to taste

Preheat a skillet or griddle over medium heat.

    Take four slices of Italian bread and spread 1 tablespoon of basil pesto on one side of each slice.

      On the uncoated side of the bread, layer slices of fresh mozzarella, provolone, tomato, sun-dried tomatoes, and fresh basil leaves.

        Sprinkle a pinch of salt and pepper over the cheese and veggies for added flavor.

          Top with the remaining four slices of bread, pesto side facing up.

            Brush the outer sides of the sandwich with olive oil for a crispy finish.

              Carefully place the sandwiches on the skillet or griddle. Cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

                Once cooked, remove from the skillet and let them rest for 2 minutes before slicing.
