Ingredients

1 sub sandwich roll or hoagie

4 ounces Genoa salami, sliced thin

4 ounces capicola, sliced thin

4 ounces pepperoni, sliced thin

4 ounces provolone cheese, sliced

1 cup shredded iceberg lettuce

1 medium tomato, sliced

1/4 cup roasted red peppers, sliced

1/4 cup sliced green olives or giardiniera for a spicy kick

2 tablespoons olive oil

1 tablespoon red wine vinegar (or citrus vinegar)

1 teaspoon dried oregano

1 garlic clove, minced

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Prepare the Dressing: In a small bowl, mix together the olive oil, vinegar, minced garlic, oregano, salt, and pepper. Stir until well combined and set aside.

Prep the Roll: Slice the sub sandwich roll horizontally, making sure not to cut all the way through – you want to create a pocket for the fillings.

Layer the Meats: Start by layering the Genoa salami on one side of the roll, followed by the capicola, and then the pepperoni on top.

Add Cheese: Lay the slices of provolone cheese over the meat layers to form a delicious barrier.

Build the Veggie Layer: On the other side of the sandwich, add the shredded iceberg lettuce, tomato slices, roasted red peppers, and olives or giardiniera.

Drizzle the Dressing: Pour the prepared dressing evenly over the entire filling of the sandwich – this will enhance all the flavors.

Close & Compress: Carefully close the sandwich and press down gently to compact the layers together.

Slice and Serve: Slice the sandwich diagonally into halves or quarters for easy handling.

Garnish: For an extra touch, garnish with fresh basil leaves on the top.

Prep Time: 15 minutes | Total Time: 15 minutes | Servings: 1 sandwich

                      - Presentation Tips: Serve the sandwich with a side of chips or a small salad. Wrap it in parchment paper for a rustic touch, and enjoy!
