2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup honey

2 large eggs

1/2 cup buttermilk

2 jalapenos, finely chopped (seeds removed for less heat)

1/4 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and honey until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, beating well after each addition. Then mix in the buttermilk until smooth.

          Gradually add the dry mixture from the medium bowl to the wet mixture, mixing until just combined. Do not overmix.

            Fold in the chopped jalapenos, shredded cheddar cheese, and cilantro if using.

              Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
