8 egg roll wrappers

4 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

2 jalapenos, seeded and finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil (for frying)

Instructions
 

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapenos, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well blended.

    Lay an egg roll wrapper on a clean surface with one corner facing you, like a diamond shape.

      Place 2 tablespoons of the jalapeno cheese mixture in the center of the wrapper.

        Fold the bottom corner over the filling, then fold in the two side corners, and roll up tightly toward the top corner. Seal the edge with a little water.

          Repeat the process with the remaining wrappers and filling.

            Heat about 2 inches of vegetable oil in a deep pot or fryer over medium heat until it reaches 350°F (175°C).

              Carefully add 3-4 egg rolls at a time to the hot oil, frying them until golden brown and crispy, about 3-4 minutes on each side. Use a slotted spoon to remove them and drain on paper towels.

                Allow the egg rolls to cool slightly before serving.
