2 pounds baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup crumbled bacon (cooked)

2 fresh jalapeños, diced (seeds removed for less heat)

2 green onions, sliced

2 tablespoons fresh cilantro, chopped (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, onion powder, salt, and pepper until fully coated.

      Spread the potatoes evenly on a baking sheet and roast in the preheated oven for 25-30 minutes, or until they are golden brown and tender.

        While the potatoes are roasting, in another bowl, mix together the softened cream cheese, shredded cheddar cheese, and crumbled bacon until well combined.
