2 cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup unsalted butter, softened

¾ cup powdered sugar

1 large egg yolk

1 teaspoon vanilla extract

¼ teaspoon almond extract

½ cup fruit jam (strawberry, raspberry, or apricot)

Finely chopped nuts (optional, for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, about 3-4 minutes.

        Add the egg yolk, vanilla extract, and almond extract to the butter mixture and beat until combined.

          Gradually mix in the flour mixture until a soft dough forms. Don’t overmix; stop as soon as everything is combined.

            Divide the dough into two equal portions. On a lightly floured surface, roll one portion into a rectangle approximately ¼ inch thick.

              Spread half of the jam evenly over the dough, leaving a small border around the edges to prevent overflow.

                Using a sharp knife, make shallow cuts (about 1 inch apart) along the edges of the rectangle. Starting from one end, roll the dough up tightly into a log shape, tucking the jam in as you roll.

                  Repeat the rolling process with the second portion of dough and remaining jam.

                    Chill both logs in the refrigerator for about 30 minutes to firm up the dough.

                      Remove the logs from the refrigerator and slice them into ½ inch thick pinwheels.

                        Place the cookies on the prepared baking sheet, spacing them about 2 inches apart. If desired, sprinkle chopped nuts on top of each cookie.

                          Bake for 12-15 minutes, or until the edges are lightly golden.

                            Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
