Jamaican Curry Shrimp

1 pound large shrimp, peeled and deveined

2 tablespoons Jamaican curry powder

1 teaspoon allspice

1 tablespoon coconut oil

1 medium onion, chopped

2 cloves garlic, minced

1 inch ginger, minced

1 bell pepper, chopped (red or green)

1 can (14 oz) coconut milk

1 tablespoon soy sauce

1 teaspoon brown sugar

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh cilantro, for garnish (optional)

Instructions
 

In a large bowl, combine the shrimp with the Jamaican curry powder, allspice, salt, and pepper. Toss the shrimp until they are evenly coated. Let it marinate for at least 15 minutes.

    In a large skillet or pot, heat the coconut oil over medium heat.

      Add the chopped onion, and cook until softened and translucent, about 3-4 minutes.

        Stir in the minced garlic and ginger, and cook for an additional minute until fragrant.

          Add the chopped bell pepper to the skillet and sauté for another 2-3 minutes.

            Pour in the coconut milk and stir well. Add the soy sauce and brown sugar, mixing all the ingredients together.

              Bring the mixture to a gentle simmer. Let it cook for about 5 minutes, allowing the flavors to meld together.

                Add the marinated shrimp into the skillet and cook for 5-7 minutes, or until the shrimp are pink and cooked through. Avoid overcooking.

                  Adjust seasoning with additional salt or pepper if needed.

                    Remove from heat and garnish with chopped green onions and cilantro before serving.
