2 cups long-grain parboiled rice

4 cups chicken or vegetable broth

1 cup blended tomatoes (fresh or canned)

1/2 cup tomato paste

1 medium onion, chopped

1 red bell pepper, chopped

1 green bell pepper, chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1-2 Scotch bonnet or habanero peppers (adjust to taste)

1 teaspoon thyme

2 teaspoons curry powder

1 teaspoon paprika

1/2 cup vegetable oil

Salt, to taste

1 cup mixed vegetables (peas, carrots, and corn)

Fresh parsley or cilantro, for garnish

Instructions
 

Rinse the rice under cold water until the water runs clear. Drain well and set aside.

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

      Stir in the minced garlic and grated ginger, and cook for an additional minute until fragrant.

        Add the blended tomatoes, tomato paste, thyme, curry powder, paprika, and Scotch bonnet or habanero peppers to the pot. Simmer for about 15-20 minutes until the mixture thickens and the oil begins to separate from the sauce.

          Pour in the chicken or vegetable broth and stir well. Once it reaches a simmer, add the rinsed rice to the pot. Stir gently to combine.

            Cover the pot with a tight-fitting lid, reduce the heat to low, and allow the rice to cook for 30-35 minutes or until the liquid is absorbed and the rice is tender. Avoid lifting the lid during cooking to retain steam.

              When cooked, fluff the rice gently with a fork and stir in the mixed vegetables. Let it sit for an additional 5 minutes.

                Serve hot, garnished with chopped parsley or cilantro and additional slices of bell pepper if desired.
