Ingredients
  

2 cups water

2 tablespoons green tea leaves (Kashmiri green tea preferred)

1/4 teaspoon baking soda

4 cups milk (whole or evaporated for creaminess)

1/4 cup sugar (adjust to taste)

1/2 teaspoon cardamom powder

1/4 cup chopped pistachios (for garnish)

1/4 cup chopped almonds (for garnish)

A pinch of salt

Ice cubes (optional for serving cold)

Instructions
 

In a medium pot, bring 2 cups of water to a boil.

    Add the green tea leaves and baking soda. The baking soda will help develop that beautiful pink color, so stir to combine and let it simmer for about 10-15 minutes on low heat.

      As the tea simmers, keep stirring occasionally until it reduces by half and deepens in color.

        Carefully strain the mixture into a large bowl or pot, discarding the leaves.

          In the same pot, add the milk and let it simmer over low heat. Slowly pour the brewed tea back into the pot with the milk, stirring constantly to emulsify the two.

            Sweeten the mixture with sugar, and add a pinch of salt and cardamom powder. Stir well and let it simmer for another 5-10 minutes until warm.

              Remove from heat and let it cool slightly before serving. You can either serve it hot or let it chill in the refrigerator for a refreshing iced version.

                When ready to serve, pour the chai into cups and garnish with chopped pistachios and almonds.
