4 pork loin chops (boneless)

1 cup almond flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 large eggs, beaten

1/4 cup grated Parmesan cheese

1/2 cup coconut oil or ghee (for frying)

1/4 cup unsalted butter

Juice of 1 lemon

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Start by gently pounding the pork loin chops between two sheets of plastic wrap or parchment paper using a meat mallet until they are about 1/4 inch thick. This ensures they cook evenly and are tender.

    Prepare a breading station: in one bowl, mix almond flour, paprika, garlic powder, onion powder, salt, and pepper. In another bowl, prepare the beaten eggs, and in a third bowl, combine almond flour and Parmesan cheese.

      Dredge each pork chop first in the seasoned almond flour mixture, then dip into the beaten eggs, and finally coat with the almond flour-Parmesan mixture. Make sure each chop is fully covered for a crispy exterior.

        In a large skillet, heat the coconut oil or ghee over medium-high heat. Once hot, carefully place the breaded pork schnitzels in the skillet, being sure not to overcrowd the pan.

          Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the schnitzels from the skillet and drain them on a plate lined with paper towels.

            In the same skillet (reduce heat to low), add the unsalted butter, lemon juice, and lemon zest. Stir until the butter is melted and the sauce is slightly thickened. Taste and adjust seasoning with salt, if necessary.

              To serve, place the schnitzels on plates and drizzle the lemon butter sauce over them. Garnish with chopped parsley for a fresh touch.
