Ingredients

1 lb corned beef, chopped

1 medium onion, diced

2 cloves garlic, minced

4 cups beef broth

1 cup cauliflower florets (fresh or frozen)

1 cup sauerkraut, drained

1 cup heavy cream

1 tablespoon mustard (Dijon or yellow)

1 tablespoon Worcestershire sauce

1 teaspoon caraway seeds (optional)

Salt and pepper to taste

1 cup shredded Swiss cheese

Fresh parsley for garnish

Instructions

Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

Add Corned Beef: Stir in the chopped corned beef, cooking for an additional 2-3 minutes until warmed through.

Pour in Broth: Add the beef broth to the pot, followed by the cauliflower florets. Bring the mixture to a gentle boil.

Simmer: Reduce the heat to low and cover the pot. Allow the soup to simmer for about 15-20 minutes or until the cauliflower is tender.

Blend for Creaminess: Using an immersion blender, carefully blend the soup until smooth. You can blend fully or leave some chunks for texture based on your preference.

Incorporate Remaining Ingredients: Stir in the drained sauerkraut, heavy cream, mustard, Worcestershire sauce, caraway seeds (if using), salt, and pepper. Heat through for another 5 minutes, allowing the flavors to meld.

Cheesy Finish: Finally, stir in the shredded Swiss cheese until melted and incorporated into the soup.

Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy your hearty Keto Reuben Soup!
