Ingredients

1 lb kielbasa (smoked sausage), sliced

2 cups canned pinto beans, drained and rinsed

1 cup canned kidney beans, drained and rinsed

1 cup barbecue sauce (preferably a thick and smoky variety)

1 medium onion, finely chopped

1 bell pepper (red or green), diced

2 garlic cloves, minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1 tablespoon brown sugar (optional, for sweetness)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley or cilantro for garnish

Instructions

Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5-7 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the sliced kielbasa to the skillet and cook until browned, approximately 5-6 minutes.

In a large mixing bowl, combine the pinto beans, kidney beans, barbecue sauce, ground cumin, smoked paprika, and brown sugar if using. Stir well to combine.

Pour the bean mixture into the skillet with the sausage and vegetables. Stir gently to incorporate all ingredients.

Season with salt and pepper to taste. Reduce heat to low and simmer for about 15-20 minutes, stirring occasionally, until heated through and flavors meld together.

Taste and adjust seasoning as needed before serving.
