1 pound kielbasa, sliced

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 carrots, diced

3 stalks celery, diced

6 cups chicken broth

1 package (16 oz) potato gnocchi

2 cups kale, chopped

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes.

    Add the diced onion, minced garlic, carrots, and celery to the pot. Sauté for another 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

      Pour in the chicken broth and add the dried thyme, smoked paprika, salt, and pepper. Bring the soup to a gentle boil.

        Once boiling, add the potato gnocchi and cook according to the package instructions, usually about 3-5 minutes.

          Stir in the chopped kale and cook for an additional 2-3 minutes until the kale is tender.

            Taste and adjust seasoning with more salt and pepper if needed.

              Serve hot, garnished with grated Parmesan cheese and fresh parsley on top.
