Kielbasa & Sauerkraut Polka Pie

1 pound kielbasa or Polish sausage, sliced

2 cups sauerkraut, drained

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon caraway seeds

1 teaspoon paprika

1 tablespoon olive oil

1 cup shredded Swiss cheese

2 sheets of puff pastry (thawed)

1 egg, beaten (for egg wash)

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet, heat the olive oil over medium heat.

      Add the chopped onion and sauté until translucent, about 5 minutes.

        Stir in the minced garlic and sliced kielbasa, cooking until the sausage is browned, approximately 7-8 minutes.

          Add in the sauerkraut, caraway seeds, paprika, salt, and pepper. Cook for another 5 minutes until heated through. Remove from heat and let it cool slightly.

            Roll out one sheet of puff pastry on a floured surface to fit your pie dish. Place it in the dish, allowing the edges to hang over.

              Spoon the kielbasa and sauerkraut mixture into the pastry-lined dish, then sprinkle the shredded Swiss cheese on top.

                Roll out the second sheet of puff pastry and place it over the filling. Seal the edges by crimping them together. Cut a few slits in the top for steam to escape.

                  Brush the top of the pie with the beaten egg for a golden finish.

                    Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.

                      Remove the pie from the oven and let it cool for a few minutes before slicing.
