Korean BBQ Meatballs with Spicy Mayo Dip

Ingredients
  

1 lb ground beef or pork (or a mix)

1/4 cup panko breadcrumbs

2 green onions, finely chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon minced garlic

1 teaspoon grated ginger

1 tablespoon brown sugar

1/4 teaspoon black pepper

1/4 teaspoon gochugaru (Korean red pepper flakes)

1 tablespoon sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Pinch of salt

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, combine the ground meat, panko breadcrumbs, chopped green onions, soy sauce, sesame oil, minced garlic, grated ginger, brown sugar, black pepper, and gochugaru.

      Mix until all ingredients are well-combined, being careful not to overmix.

        Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

          Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and browned.

            While the meatballs are baking, prepare the spicy mayo dip by whisking together the mayonnaise, sriracha, lime juice, and salt in a small bowl. Adjust the spiciness to taste.

              Once the meatballs are done, remove them from the oven and let them cool slightly.

                Serve the meatballs warm, garnished with sesame seeds and green onions, alongside the spicy mayo dip.
