Ingredients

1 lb ground beef (80/20 for flavor)

3 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce (low sodium)

2 tbsp brown sugar

2 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp gochujang (Korean chili paste)

1 green onion, chopped (for garnish)

1 tbsp sesame seeds (for garnish)

2 cups cooked white rice

1 cup shredded carrots

1 cup steamed broccoli florets

Optional: kimchi for serving

Instructions

Prep the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang until well combined. Set aside.

Cook the Beef: In a large skillet or pan over medium-high heat, add the ground beef. Cook, breaking it apart with a spatula until browned, about 5-7 minutes.

Add Aromatics: Drain excess fat if necessary, then add the minced garlic and grated ginger to the pan. Cook for another 1-2 minutes until fragrant.

Combine with Sauce: Pour the prepared sauce over the browned beef. Stir well to incorporate and let it simmer for 3-4 minutes, allowing the flavors to meld.

Prepare Bowls: In serving bowls, layer 1 cup of cooked rice at the base. Top with the beef mixture, then add the shredded carrots and steamed broccoli.

Garnish and Serve: Sprinkle each bowl with chopped green onions and sesame seeds. Serve immediately, with kimchi on the side if desired.
