Lasagna Soup

Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef or vegetable broth

2 teaspoons dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess grease if necessary.

    Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Pour in the crushed tomatoes and broth. Add the oregano, basil, red pepper flakes, salt, and pepper. Stir well and bring to a simmer.

        Once simmering, add the broken lasagna noodles to the pot. Cook according to the package instructions until al dente, about 8-10 minutes.

          While the noodles are cooking, in a small bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well.

            Once the noodles are cooked, remove the soup from heat. Stir in the cheese mixture until creamy and well combined.

              Serve the soup in bowls and top with the remaining mozzarella and Parmesan cheeses. Garnish with fresh basil leaves.
