Ingredients

1 cup leftover mac 'n' cheese

4 slices of bread (your choice: sourdough, whole wheat, or white)

4 slices of cooked bacon (crispy)

2 tablespoons butter

1/2 cup shredded cheddar cheese

1/4 teaspoon garlic powder (optional)

1/4 teaspoon smoked paprika (optional)

Salt and pepper to taste

Instructions

Prepare the Mixture: In a bowl, combine the leftover mac 'n' cheese with the shredded cheddar cheese. If desired, sprinkle in garlic powder and smoked paprika for an extra kick. Mix well and set aside.

Build the Sandwich: Take two slices of bread and spread butter on one side of each. Place one slice butter-side down in a skillet over medium heat. Layer half of the mac 'n' cheese mixture onto the bread slice in the skillet. Add two slices of crispy bacon on top, then pile on the remaining mac 'n' cheese mixture. Top with the second slice of bread, butter-side up.

Grill to Perfection: Cook the sandwich for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwich over and cook the other side for another 3-4 minutes. If the cheese isn’t melting well, you can cover the pan with a lid to help it along.

Check for Doneness: Once both sides are crispy and golden, and the cheese is gooey, remove the sandwich from the skillet. Let it rest for a minute before cutting it in half.

Serve: Cut the sandwich in half and serve with your favorite dipping sauce or a side of pickles for an extra tang!
