6 large jalapeno peppers

2 cups leftover mac 'n' cheese

1/2 cup grated cheddar cheese

1/4 cup cream cheese, softened

1/4 cup diced cooked bacon (optional)

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper, to taste

Olive oil for drizzling

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice each jalapeno pepper in half lengthwise and remove the seeds and membranes for less heat (or leave some in if you like it spicy).

      In a mixing bowl, combine the leftover mac 'n' cheese, grated cheddar cheese, softened cream cheese, diced bacon (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Stuff each jalapeno half generously with the mac 'n' cheese mixture.

          Place the stuffed jalapenos on a baking sheet and drizzle lightly with olive oil.

            Bake in the preheated oven for about 20-25 minutes or until the jalapenos are tender and the cheese is bubbly and golden.

              Remove from the oven and let cool for a few minutes before serving.

                Garnish with chopped fresh chives and serve warm.
