1 cup unsalted butter, softened

1 cup granulated sugar

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup lemon zest (about 2 large lemons)

1/2 cup fresh lemon juice (about 3 large lemons)

4 large eggs

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing it lightly or lining it with parchment paper for easy removal.

    Make the base: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer.

      Add the flour, baking powder, and salt to the butter-sugar mixture. Mix until just combined to form a crumbly dough.

        Press the dough firmly and evenly into the bottom of the prepared baking pan. Use your fingers or the bottom of a glass to smooth it out evenly.

          Bake the base: Place the pan in the preheated oven and bake for 18-20 minutes, or until the edges are lightly golden. Remove from the oven and let it cool slightly.

            Prepare the lemon filling: In a medium bowl, whisk together the eggs, lemon zest, lemon juice, powdered sugar, vanilla extract, and a pinch of turmeric if using, until smooth and well combined.

              Pour the lemon filling over the cooled base, spreading it evenly with a spatula.

                Bake again: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and has a slight jiggle in the center.

                  Once baked, let the dessert cool completely in the pan on a wire rack before slicing into bars.
