For the Cookie Cups:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

For the Lemon Filling:

1 cup granulated sugar

2 large eggs

⅓ cup fresh lemon juice (about 2-3 lemons)

1 tablespoon lemon zest

¼ cup all-purpose flour

½ teaspoon baking powder

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with cupcake liners.

    Make the Cookie Dough:

      - In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the egg and vanilla extract, mixing until well combined.

          - Gradually add the flour, baking powder, and salt, mixing until the dough is formed.

            Form the Cookie Cups:

              - Using a tablespoon, scoop portions of cookie dough and press them into the bottom and up the sides of each muffin cup to create a cup shape. Ensure the walls aren’t too thin.

                Bake the Cookie Cups:

                  - Bake the cookie dough in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from oven and let cool slightly.

                    Prepare the Lemon Filling:

                      - In a bowl, whisk together the sugar, eggs, lemon juice, lemon zest, flour, and baking powder until smooth and well combined.

                        Fill the Cookie Cups:

                          - Pour the lemon filling into each cookie cup, filling them about ¾ full.

                            Bake Again:

                              - Return the muffin tin to the oven and bake for an additional 18-20 minutes, or until the lemon filling is set and lightly golden on top.

                                Cool and Serve:
