4 cod fillets (about 6 ounces each)

3 tablespoons unsalted butter

2 tablespoons olive oil

3 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Instructions
 

Begin by patting the cod fillets dry with paper towels and season both sides with salt, pepper, and dried thyme.

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until the butter has melted and starts to foam.

      Carefully place the cod fillets in the skillet, cooking for 3-4 minutes on each side or until they turn golden brown and flake easily with a fork. Remove the fillets from the skillet and transfer them to a warm plate.

        In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.

          Stir in the lemon juice and lemon zest, scraping up any browned bits from the bottom of the skillet. Allow the sauce to simmer for 1-2 minutes to slightly thicken.

            Return the cod fillets to the pan, spooning the sauce over the top to coat them in the lemon buttery goodness. Cook for an additional minute to warm the fish through.

              Remove from heat, garnish with fresh parsley, and serve with lemon wedges on the side.
