1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

Zest of 2 lemons

⅓ cup freshly squeezed lemon juice

Pinch of salt

Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press the mixture firmly into the bottom of a 9x9-inch baking pan lined with parchment paper. Bake for 10 minutes and then let it cool slightly.

    Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add 1 cup of sugar and mix until fully incorporated and fluffy.

      Incorporate the Eggs: Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract, lemon zest, lemon juice, and a pinch of salt, mixing just until combined.

        Combine and Bake: Pour the lemon filling over the cooled crust and spread evenly. Bake in the preheated oven for 25 to 30 minutes until the edges are firm but the center slightly jiggles.

          Cool and Chill: Remove the cheesecake from the oven and allow it to cool at room temperature, then refrigerate for at least 4 hours or overnight for best results.
