Lemon Chicken Orzo Soup

1 pound boneless, skinless chicken breasts

1 cup orzo pasta

1 medium onion, diced

2 carrots, sliced

2 celery stalks, diced

4 cloves garlic, minced

6 cups chicken broth

1 cup fresh spinach, chopped

1 lemon (zested and juiced)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Sear for about 5 minutes per side, until browned. Remove the chicken and set aside.

    In the same pot, add the diced onion, sliced carrots, and diced celery. Sauté for about 5–7 minutes until the vegetables are tender.

      Stir in the minced garlic, dried thyme, and dried oregano, and cook for an additional minute until fragrant.

        Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the orzo and return the seared chicken to the pot.

          Reduce the heat and let the soup simmer for about 10–12 minutes, until the orzo is cooked and the chicken is no longer pink in the middle. Remove the chicken, shred it using two forks, and return the shredded chicken to the soup.

            Stir in the fresh spinach, lemon zest, and lemon juice. Simmer for another 5 minutes until the spinach is wilted.

              Taste the soup and adjust seasoning with salt and pepper as needed.

                Ladle the soup into bowls and garnish with fresh parsley.
