1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

8 oz cream cheese, softened

2 large eggs

2 tablespoons lemon zest (from about 2 lemons)

¼ cup fresh lemon juice

1 teaspoon vanilla extract

½ cup powdered sugar (for frosting)

1 tablespoon lemon juice (for frosting)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and cream cheese using an electric mixer until smooth and fluffy, about 2-3 minutes.

        Add the granulated sugar to the butter and cream cheese mixture, and beat until well combined.

          Incorporate the eggs, one at a time, beating well after each addition. Then, mix in the lemon zest, lemon juice, and vanilla extract until fully incorporated.

            Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!

              Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  While the muffins are cooling, prepare the cream cheese frosting by beating the powdered sugar with 1 tablespoon of lemon juice in a small bowl until smooth.

                    Once the muffins are completely cool, drizzle or spread the cream cheese frosting over the tops of each muffin.
