2 (5-ounce) cans of tuna, drained

1/2 cup breadcrumbs (preferably panko)

1/4 cup fresh parsley, chopped

2 green onions, finely chopped

1/4 cup mayonnaise

1 large egg, beaten

2 cloves garlic, minced

Zest of 1 lemon

1 tablespoon lemon juice

Salt and black pepper to taste

Olive oil for frying

In a large mixing bowl, combine the drained tuna, breadcrumbs, chopped parsley, and green onions.

    In a separate small bowl, mix the mayonnaise, beaten egg, minced garlic, lemon zest, lemon juice, salt, and pepper until smooth.

      Pour the mayonnaise mixture into the tuna mixture and gently fold together until all ingredients are well combined.

        Using your hands, form the mixture into small patties, about 2 to 3 inches in diameter. You should have approximately 8 cakes.

          Heat a couple of tablespoons of olive oil in a large skillet over medium heat. Once hot, add the tuna cakes carefully.

            Fry for about 4-5 minutes on each side, or until golden brown and crispy. Be cautious while flipping to prevent breaking.

              Once cooked, remove tuna cakes from the skillet and place them on a plate lined with paper towels to absorb excess oil.

                Serve warm with a wedge of lemon on the side for extra zest.
