1 cup unsalted butter, softened

1 cup granulated sugar

1 egg

2 teaspoons vanilla extract

Zest of 1 large lemon

2 tablespoons fresh lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh or frozen raspberries

1/2 cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the egg, vanilla extract, lemon zest, and lemon juice to the bowl and mix until well combined.

        In another bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

            Gently fold in the raspberries, being cautious to avoid breaking them up too much.

              Drop tablespoons of the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.

                  Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

                    Once cool, dust the cookies with powdered sugar for a lovely finish.
