Ingredients

4 pieces of chicken (legs or thighs)

2 cups buttermilk

3 bags of black tea (or 3 tablespoons loose leaf tea)

1 teaspoon lemon zest

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 ½ cups all-purpose flour

Oil for frying

Instructions

Prepare the Marinade: Brew the black tea by steeping the tea bags in 2 cups of boiling water for about 5 minutes. Remove the bags and let the tea cool to room temperature.

Marinate the Chicken: In a large bowl, combine the buttermilk, cooled tea, lemon zest, lemon juice, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare for Frying: In a shallow dish, add the all-purpose flour seasoned with a pinch of salt and pepper. Mix well.

Heat the Oil: In a deep skillet or large frying pan, pour enough oil for frying (about 1-2 inches deep) and heat it to 350°F (175°C).

Coat the Chicken: Remove the chicken from the marinade, letting the excess drip off. Dredge each piece in the seasoned flour, pressing lightly to adhere the coating.

Fry the Chicken: Carefully place the coated chicken pieces in the hot oil. Fry for about 12-15 minutes on each side, or until they are golden brown and crispy. The internal temperature should reach 165°F (74°C).

Drain and Rest: Once cooked, remove the chicken and place it on a paper towel-lined plate to drain excess oil. Let it rest for 5 minutes before serving.
