1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

1 celery stalk, diced

1 teaspoon dried oregano

1 teaspoon ground cumin

½ teaspoon smoked paprika

1 can (15 oz) chickpeas, rinsed and drained

4 cups vegetable broth

1 cup diced tomatoes (canned or fresh)

2 cups baby spinach or kale

Juice of 1 large lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, carrots, and celery. Cook for an additional 3-4 minutes until the vegetables begin to soften.

      Add the dried oregano, ground cumin, and smoked paprika to the pot, stirring to coat the vegetables in the spices. Cook for another minute until fragrant.

        Add the rinsed chickpeas and diced tomatoes to the pot, stirring to combine.

          Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer, uncovered, for about 20 minutes.

            Stir in the baby spinach or kale and cook for an additional 5 minutes, or until the greens are wilted.

              Remove the soup from heat and stir in the lemon juice. Season with salt and pepper to taste.

                Serve hot, garnished with fresh parsley and lemon slices for a vibrant touch.
