2 cups active sourdough starter

2 cups bread flour

1 cup rye flour

1 cup warm water (about 110°F/43°C)

1 tablespoon caraway seeds

1 tablespoon honey

1 teaspoon salt

1 tablespoon olive oil

Instructions
 

In a mixing bowl, combine the active sourdough starter and warm water. Stir together until well blended.

    Add the honey and mix until dissolved.

      In a separate bowl, whisk together the bread flour, rye flour, salt, and caraway seeds.

        Gradually mix the dry ingredients into the wet mixture until a shaggy dough forms.

          Transfer the dough to a floured surface and knead gently for about 10 minutes, until smooth and elastic.

            Shape the dough into a ball, then place it in a lightly greased bowl. Cover with a damp cloth and let it rise in a warm place for about 4-6 hours, or until doubled in size.

              Once risen, punch down the dough gently to release the air and turn it out onto a floured surface. Shape it into a loaf and place it seam-side down in a lightly greased 9x5-inch loaf pan.

                Cover the pan with a cloth and let the dough rise for another 2-3 hours, or until it has risen slightly above the rim of the pan.

                  Preheat your oven to 375°F (190°C) during the last 30 minutes of the second rise.

                    Bake the bread in the preheated oven for 30-35 minutes or until the top is golden brown and sounds hollow when tapped.

                      Remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
