1 cup plain Greek yogurt

1/2 cup granulated sugar

1/4 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon baking soda

Zest of 1 lemon

1 tablespoon lemon juice

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    In a large mixing bowl, combine the Greek yogurt and sugar. Whisk until smooth and creamy.

      Add the vegetable oil, eggs, and vanilla extract to the yogurt mixture. Mix until fully combined and slightly frothy.

        In a separate bowl, sift together the all-purpose flour, baking powder, salt, and baking soda.

          Gradually incorporate the dry ingredients into the wet mixture, mixing gently until just combined. Do not overmix.

            Fold in the lemon zest and lemon juice to the batter, adding a fresh, bright flavor.

              Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                  Once baked, remove from the oven and let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Once cooled, dust the top with powdered sugar if desired, and cut into slices to serve.
