2 cups all-purpose flour

1 ½ cups granulated sugar

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

3 large eggs

1 cup buttermilk

Zest of 2 large lemons

1 teaspoon vanilla extract

½ cup fresh lemon juice (about 3 lemons)

Powdered sugar for dusting (optional)

Fresh mint leaves for garnish (optional)

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a separate large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and lemon zest, mixing until just combined.

          Gradually add the flour mixture to the butter mixture alternately with the buttermilk, starting and ending with the flour. Mix until just combined—do not overmix.

            Fold in the fresh lemon juice until evenly dispersed in the batter.

              Pour the batter into the prepared pan and spread it out evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Once baked, let the cake cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.

                  Once the cake is completely cool, dust the top with powdered sugar (if using) and garnish with fresh mint leaves for a pop of color.
