1 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 cup almond flour

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup mixed berry jam (raspberry, strawberry, or your choice)

Powdered sugar for dusting

Instructions
 

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).

    Add the egg and vanilla extract, mixing until fully incorporated.

      In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, salt, and ground cinnamon.

        Gradually add the dry ingredients to the wet mixture, mixing just until a dough forms. Avoid overmixing.

          Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 2 hours or until firm.

            Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              Roll out one disk of dough on a lightly floured surface to about 1/4 inch thick. Using a star or round cookie cutter, cut out cookies.

                For every other cookie, use a smaller cookie cutter to cut out the center, creating a window for the jam. Place the cookies on the baking sheets about 1 inch apart.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                    Once the cookies are cool, spread the mixed berry jam on the solid cookies and top them with the cookie cutouts to form a sandwich.

                      Dust the cookie sandwiches with powdered sugar for a beautiful finish before serving.
