4 medium-sized russet potatoes

1 lb sirloin steak, cut into bite-sized cubes

3 tablespoons olive oil, divided

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup green onions, sliced

1 tablespoon butter

Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the potatoes clean, then dry them and pierce several times with a fork. Rub with 1 tablespoon of olive oil and sprinkle with salt. Place directly on the oven rack and bake for 45-60 minutes until tender (you can check by inserting a fork).

    Prepare the Steak Bites: While the potatoes are baking, heat a large skillet over medium-high heat. In a bowl, combine the steak cubes, remaining 2 tablespoons of olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
