4 large russet potatoes, peeled and grated

1 cup cheddar cheese, shredded

1 cup cooked bacon, crumbled

1 small red onion, finely chopped

1 green bell pepper, diced

1/2 cup sour cream

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Start by preheating your oven to 400°F (200°C).

    In a large bowl, combine the grated potatoes with garlic powder, salt, and pepper. Mix well and let them sit for about 10 minutes to release excess moisture.

      After 10 minutes, squeeze out any remaining moisture from the potatoes using a clean kitchen towel, ensuring they are dry.

        In a large skillet, heat olive oil over medium heat. Add the chopped red onion and green bell pepper, sautéing until they are soft and fragrant (about 5 minutes).

          Stir in the grated potatoes and press them down into an even layer in the skillet. Cook without stirring for 5-7 minutes until the bottom is golden brown.

            Carefully flip the hash browns using a large plate. Place the plate on top and invert the skillet to transfer the hash browns back into the pan to cook the other side for another 5-7 minutes, pressing down to form a crust.

              Once the hash browns are crispy and golden, sprinkle the cheddar cheese and crumbled bacon over the top. Place the skillet in the preheated oven for 5-10 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let it sit for a few minutes. Drizzle sour cream over the loaded hash browns and garnish with freshly chopped chives before serving.
