Loaded Tater Tot Nachos {Totchos}

Ingredients
  

1 (32 oz) bag frozen tater tots

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked ground beef or turkey (seasoned)

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (canned or frozen, thawed)

1 jalapeño, sliced (optional)

1/4 cup diced red onion

1/4 cup sliced black olives

1 ripe avocado, diced

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1 tablespoon taco seasoning

Salt and pepper, to taste

Hot sauce, for serving (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    Spread the frozen tater tots evenly on a large baking sheet. Bake for 25-30 minutes or until they are golden brown and crispy, flipping halfway through.

      While the tater tots are baking, mix the seasoned ground beef or turkey with the taco seasoning. Heat over medium heat until warmed through, about 5 minutes.

        Once the tater tots are done, remove them from the oven and layer them on a large serving platter.

          Evenly distribute the warmed ground meat over the tater tots.

            Sprinkle the shredded cheddar and Monterey Jack cheese over the top, followed by the black beans, corn, red onion, and jalapeño slices.

              Return the loaded tater tots to the oven and bake for an additional 5-10 minutes, just until the cheese melts and is bubbly.

                Once out of the oven, top with diced avocado, sour cream, fresh cilantro, and black olives.

                  Serve hot and drizzle with hot sauce if desired.
