Ingredients
  

4 large bell peppers (any color)

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup spinach, chopped

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Olive oil for drizzling

Fresh basil leaves for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, cover, and reduce the heat to low. Let it simmer for about 15 minutes, or until the quinoa is fluffy and has absorbed all the liquid. Remove it from heat and let it cool slightly.

      Prepare the peppers: While the quinoa is cooking, slice the tops off the bell peppers and remove the seeds and membranes. Lightly coat the outside of the peppers with olive oil and place them upright in a baking dish.

        Mix the filling: In a large bowl, combine the cooked quinoa, mozzarella, ricotta, Parmesan, chopped spinach, minced garlic, Italian herbs, salt, and pepper. Stir until well combined.

          Stuff the peppers: Generously spoon the quinoa mixture into each prepared bell pepper, packing it down lightly.

            Bake: Drizzle a little olive oil on top of each stuffed pepper and cover the baking dish with aluminum foil. Bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese on top is melted and bubbly.

              Garnish and serve: Once done, remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
