1 lb ground beef (85% lean)

4 cups green cabbage, thinly sliced

1 medium carrot, julienned

1 bell pepper (red or yellow), thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or coconut aminos for a lower sodium option)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon red pepper flakes (adjust for spice level)

Salt and pepper, to taste

2 green onions, sliced for garnish

Sesame seeds for garnish (optional)

Instructions
 

In a large skillet or wok, heat the olive oil over medium-high heat.

    Add the ground beef and cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes. Drain any excess fat if necessary.

      Add the minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.

        Toss in the sliced cabbage, carrot, and bell pepper. Stir-fry for about 5-6 minutes, or until the vegetables are tender but still crisp.

          Pour in the soy sauce and sesame oil, mixing everything together thoroughly. Allow the stir fry to cook for an additional 2-3 minutes.

            Season with red pepper flakes, salt, and pepper to taste. Mix again and remove from heat.

              Serve hot, garnished with sliced green onions and sesame seeds if desired.
