In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, olive oil, and minced garlic until well combined. This will be your glaze.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
Season the salmon fillets with salt and black pepper on both sides and place them skin-side down on the prepared baking sheet.
Brush each salmon fillet generously with the maple Dijon glaze, reserving some for later.
Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, brushing with more glaze halfway through cooking.
Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
For serving, drizzle any remaining glaze over the salmon, garnish with chopped fresh parsley or chives, and serve with lemon wedges on the side.

For a gluten-free option, use tamari instead of soy sauce.
