Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1/4 cup pure maple syrup

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

1/4 cup pecans, roughly chopped

Fresh parsley, chopped for garnish

Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, combine the halved Brussels sprouts with olive oil, maple syrup, balsamic vinegar, Dijon mustard, salt, and pepper. Toss well to coat evenly.

Spread the Brussels sprouts on a large baking sheet in a single layer.

Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until they are golden brown and tender.

In the last 5 minutes of roasting, sprinkle the chopped pecans over the Brussels sprouts to allow them to toast slightly and enhance their flavor.

Once done, remove from the oven and let cool for a couple of minutes. Adjust seasoning with more salt and pepper if needed.

Garnish with freshly chopped parsley before serving.
